If there’s a dish I’m super fond of and that holds a lot of nostalgic value it’s pasta. However, I try to avoid eating it at night and if I do eat it, it’s usually protein pasta from the brand Banza, which is an amazing substitute.
We all know LA has one of the best food scenes in the world. However, I couldn’t help but miss the lack of healthy pasta bars. In March 2021, Impasta became LA’s first casual healthy pasta bar with vegan and keto friendly options.
Located in Beverly Hills, Impasta is currently only operating through a walk-up window, but they’re currently in the process of building their dine-in area. So far, I’ve been there twice.
The first time I went there, I had the Spaghetti Squash with pink sauce. The sauce was incredibly flavorful and the burrata cheese (add-on) was creamy and decadent. The spaghetti squash noodles were delicious and I was surprised to see how well they absorbed the sauce and the sprinkle of herbs. Sometimes, when I made butternut squash noodles at home, the sauce didn’t stick to the noodles at all. Every bite was packed with so much flavor that even non-vegans will love this dish.
The portions are mid-size, which are ideal for one person. Note that the burrata cheese I had was not vegan, but they offer a vegan cashew cheese burrata.
On my second time, I decided to order the Cauliflower Gnocchi with the Impossible bolognese sauce. I wanted to see how their cauliflower gnocchi differed from the beloved cauliflower gnocchi from Trader Joe’s. Needless to say, this dish was another homerun.
The gnocchis had a lightly toasted exterior, and an incredibly pillowy soft texture on the inside. They were so good!! They were bigger and not sticky like the ones from Trader Joe’s.
I’ve had a lot of meat sauces throughout my life, but I really couldn’t tell the difference between Impasta’s bolognese sauce and a regular bolognese sauce. I loved it so much that after I finished the pasta, I cleaned my plate. The sauce was the winner for me.
As you can see in the picture of the menu above, you can customize your pasta however you want!! I 100% recommend trying their Impossible Bolognese sauce with the Cauliflower gnocchi.
On my first time there, Harry, the owner, was there. He said he wanted to make healthy pasta accessible for everyone, hence the reasonable prices and fair portions! He said he loved pasta and agreed with me that sometimes you don’t want the calories of a regular pasta — you want something lighter.
Impasta’s menu will definitely keep you coming back for more! I did not plan to go there twice, but it was so good and well-priced that I had to go back. I also work nearby, which was another excuse to pay them a visit.
It’s also important to note that all the pasta dishes at Impasta will leave you fully satisfied.
They also have pizzas, but if you’re a first-timer, I would stick to their pastas. Everything is fresh and made to order on the spot, which is why they may take a little long. Although Impasta is available through food delivery apps, if you can go to Beverly Hills and pick up your order, I would do it.
